I have been a little naughty this pregnancy…actually I have been very naughty and overindulging on ALLLLLLLL the treats and have completely fallen off my refined sugar free lifestyle wagon.
So whilst prepping for the arrival of the babe I have been loading the freezer up with healthy dinners, snacks and treats so that once the little one arrives I have no excuse not to fuel myself with all the right choices that won’t affect his/her little digestive system either.
I was lucky to be sent some WHOLE EARTH Sweetener Co. products to try out so I had a play around and came up with a delish Banana Choc loaf using their stevia which can easily be whipped up into mini muffins too, perfect for lunch boxes or to curb those sweet cravings. I can see these being my go to mid arvo snack or after dinner treat!
SO HERE IT IS YOU CAN ENJOY THEM TOO…BUT BEWARE, ITS HARD TO STOP AT JUST ONE!
INGREDIENTS
2 x Large Ripe Bananas
4 x Eggs
2c Almond Meal
1 scoop protein powder (optional) I used Nuzest Vanilla
1/4 c Coconut Oil
1t Vanilla Paste
1/2t Baking Powder
Pinch of Himalayan Salt
1/4c WHOLE EARTH Sweetener Co. Stevia
1/4-1/2 c Chopped Dark Chocolate
METHOD
- Preheat oven to 160 degrees Celsius
- Mash the bananas
- Add all other ingredients except for the Chocolate.
- Mix together
- Stir in dark chocolate
- Pour into a loaf tin or muffin tray and bake for 30 mins or until cooked through (oven dependant)
Makes one loaf or 12 muffins
