These are what I turn to when I am having a sweet tooth moment. They are refined sugar free, gluten free and dairy free!
They are super quick and easy to whip up and last for a while in the fridge for those late night cravings.
There is no set recipe to follow for these – I tend to just throw ingredients into the food processor and see how it turns out 🙂
What I tend to use:
Raw almonds
raw cashews
dates
brazil nuts
chai seeds
sunflower seeds
pumpkin seeds
(or whatever other nuts and seeds you have lying around in the cupboard!)
Coconut to roll in
Method:
Chuck them all in the food processor!!
I tend to throw the dates in first and give them a bit of a whiz to get them broken down, but I stop before it turns into a paste as it will be harder to mix the other ingredients into that!
I then throw in all the nuts and blitz it again. Then I put in anything else I want to add and mix it until everything is all chopped up and the mixture us very fine.
Once all mixed up, put some coconut into a bowl and roll up the mixture into balls and then roll through the coconut.
EASY PEASY!!
The mixture may look and feel really crumbly but if you squeeze it it should all stick together and form a ball. If it doesn’t you may not have put enough dates into the mixture compared to the dry ingredients.
Once all rolled and coconuted I store in an airtight container in the fridge and they can last for at least a week….although they never do in my house!!
