Yet another Pinspiration!
I came across a pin saying “best carrot cake ever” and I just had to give it a go!! I had also come across a recipe for a pineapple carrot cake and that really did tickle my fancy. I just had to give them a go!! I wasn’t going to bake two cakes though because with my weakness for carrot cake I would have eaten both of them!

So I created something in between and it was delicious! I think I mainly used the pineapple recipe but only included all the necessary ingredients. If you haven’t realized yet I follow recipes…but not very well! I like to be creative even when I am baking! sometimes it works out and sometimes it doesn’t!
This time it worked out DELICIOUSLY!!
So I think I omitted the pine nuts and possibly the molasses as I didn’t have any of that in the house at the time. I also used the recipe for the cream cheese icing from the “best carrot cake ever” recipe. And lets be honest a GREAT carrot cake HAS to have GREAT icing! after all that is the best part!!
